Larin V. Improvement of the technology of red dry table wines in the conditions of climate change

The dissertation is devoted to the theoretical and experimental substantiation of improving the technology of red dry table wines. Assessment of possible agroclimatic resources of Ukraine in the conditions of climate change shows a decrease in the negative impact of limiting factors for viticulture. Accordingly, the list of regions favourable for viticulture will expand. Variable and unpredictable temperature regimes and precipitation amounts from year to year affect the physicochemical and organoleptic characteristics of grapes. Modern legislation provides for the division of the entire territory of Ukraine into wine-growing zones in accordance with the climatic classification of wine-growing zones of the European Union. The use of technological techniques will allow within one year to control the impact of climate change on the typicality of the wines obtained. The relevance of the problem lies in solving an important task for Ukrainian winemaking - determining technological techniques that will level and preserve the typical physicochemical and organoleptic features of red dry table wines in conditions of climate change.
