The dissertation on reception of a scientific degree of Cand.Tech.Sci. behind a speciality 05.11.13 - devices and a quality monitoring and definition of structure of substance. - the Kiev state university of technologies and design, Kiev, 2001. The dissertation is devoted to increase of accuracy of measurements and reliability of the control of parameters that characterize structure and quality of dairy products, due to application of electronic means in technological process of their manufacture. Offered models of dairy products which represent binary disperse systems which create a direct or return kind. Settlement formulas of definition of dielectric permeability are recommended on contents of water and dairy fat. Advanced а quality monitoring of structure and quality of dairy products which allows to estimate in them quantity of water, concentration of fat, fiber and other food components. New directions of construction of means of measurement of structure of dairy products in a range of high and ultrahigh frequencies are developed. Use of a method of periodic comparison has allowed to receive independence of results of the analysis from additeishen and multiplicate errors of transformation and other influential factors that has allowed to create modern devices of the express train - analysis with use of various updatings and with application of modern element base.
