Studies the question of improvement of demand analysis methods and their organization for canned fruit an vegetable production. The paper reveals the role and place of demand in a complicated mechanism of market economy. There have been made the suggestions of following a geographical and demographical segmentation of the market. There also has been defined the methods of prognostication for demand. The paper also shows the necessity of improvement of method of demand analysis and its influence on financial results of the enterprise. The problem of effective risk direction of unclaimed goods is examined.
