The thesis is devoted to the problems of processing technology that makes energy reduce technologies of production of preserve. There were developed the technologies of tinned goods called "The preserve from apples" and "The preserve from cherries without stones"; from the technology scheme of which boiling down was excluded. This process is very long. That's why it is realized at high temperature regimes. With the help of it the structure of raw material and its chemical composition change. The quality of finished goods deteriorates as a result of these processes. The developed technologies are based on scientific substantiations and characterizations of regularities of the investigated processes.
