Essay

The thesis deals with formation and scientific reasoning of ecologically clean bean food supplement and of its usage in combined meat products. The textured bean flour technology is developed and recommended mixture in combined restructured ham pork products compounding is established. It is concluded that while using new protein supplement and preserving the organoleptic characteristics of combined ham, the amino acid composition of the combined ham is optimized and the cost price in comparing with traditional products is reduced. The normative-technical documentation and conducted patents for the textured bean flour and combined restructured ham products are worked out and submitted.
