3. The thesis is devoted to study soy-beans with the aim of its(her) processing and use in a feed(meal) of the population and development of technology of its complex processing and using in people nutrition and elaboration of technology of complex processing of soy-beans with receiving of dry soy-milk and soy’s tinned products. The growth “Arcadia odesskaya” contents of protein - 35 %) was selected as a result of tests. Also was determined the plane of water-heat processing of soy-beans for gradual destruction its ant nutritious and toxical compounds, determined the optimal modes for extracting process in a system “soy-flour-water”, determined the modes of drying of soy-milk, elaborated and tested modes of three kinds modes of soy’s tinned products, determined sizes of soy milk at different temperatures of storage and humidity, elaborated technologies of using of dry soy-milk in food industry.
