Essay

The dissertation is devoted to development of canned low alcoholic grape-vegetable beverages technology. On the developed technology two kinds of a product have been received: blended low alcoholic grape-vegetable beverages on the basis of highly alcoholic fractions of grape wine stocks and vegetable juices - melon, cucumber, celery and low alcoholic grape beverages on the basis of low alcoholic fractions. Flow sheets of reception of natural vegetable juices-semiproducts without a pulp - melon, cucumber and celery are developed. Modes of block freezing out of white and red table dry grape wine stocks. Scientifically proved parameters of pasteurization and the hot process bottlery, providing the guaranteed biological stability of finished goods.
