Results concerning studying the operability, zoned varieties and promising varieties of a table grape of austral steppe of Ukraine to low-temperature freezing and long-term storage on organoleptic and physicobiological indexes (size of loss of juice, the sum of saccharums, titrated acids, vitamin C, the sum of phenolic materials, oxidoreductases) are submitted. Method of mathematical modeling the certain index of resistance criterion of baccas of grapes to action of low temperatures. It is shown, that the assessment of suitability for a grapes to freezing and long-term storage is the most expedient for spending on a degree of stability for size of the attitude of activity polyphenoloxidases the content of phenolic masteries. Results of researches can be used at storage of agricultural production in a process industry. Zoned variety of a table grape Moldova and Original are the most cultivable to low-temperature freezing and long-term storage. Economic efficiency from realization of quickly refrigeratedgrapes of the best varieties is certain.
