The thesis is dedicated to scientific substantiation intention used fructose in production of condensed milk products and mining of the technology of condensed milk products with fructose. Technologies parameters determined and substantiation of condensed milk products with fructose. Term and conditions of storage of condensed milk products with fructose has been established. The complex estimation of quality working for condensed milk products with fructose. The patents for the invention affirm the outcomes of researches. Standard documents of the condensed milk products with fructose have been developed and confirmed. Industrial approbation of the developed technology of condensed milk products with fructose of the "Ovrutsky milk plant" has been carried out.
