Essay

The dissertation is devoted to the high-caloric fruity-vegetable beverages creation on a base of vegetable ingredient in accordance to technology, which allows saving as much as possible raw materials biologically active substances. The complication of technology is special starch hydrolyses conducting, which determines beverage reological characteristic and forms the ready-made product consistence.Twostage process of starch hydrolyses was investigated. Process parameters can be circumscribed with a second degree equation. It was shown that technological process construction in accordance to a developed recommendation allows to make a product with a flow consistence.
