Essay

The thesis is dedicated to the development of production engineering of grape juice due to the application of new technique of beverage microwave treatment for their mi-crobial stabilization. Analysis of the existing techniques of thermal and microwave treatment was carried out. Advantages and disadvantages of traditional heating of prod-ucts in microwave frequency electromagnetic field, which is not widely adopted in food industry because of the equipment imperfection, are shown.
