Essay

The dissertation is devoted working out of technology of grape juice with the high maintenance of phenol сonnections by processing of the whole cluster of grapes. The analysis of existing technologies of grape juice is carried out. It is shown that at classical technology of grape juice the significant amount of phenol сonnections which is in seeds, a crest and a thin skin is lost.
