Essay

Dissertation is devoted to the questions of expansion of range of the dietary canned products on basis of animal and vegetable raw material and increase of it biological value. It was determined that a process of oxidative gelation of pectin matters over a peroxidase does not depend on the degree of pectin methoxylation, but depend on content of polyphenol compounds, their oxidability degree and peroxidase activity.
