Thesis is devoted to problem of decreasing energy, resourcesaving and biological value’s increasing of preserved green pea. On the ground of theoretical and experimental researches green pea’s preservation technology was improved in energysaving in 40%, in potable water saving in 2,6…3,0 m per 1 ton of pea, and decreasing of pea’s soluble substances losses in 20…30 %.
