Essay

Thesis is devoted to the development of production technology of canned foods from leafy vegetables based on chlorophyll and establish ways to stabilize the pigment complex during processing. Options pretreatment of raw materials that prevent uncontrolled oxidation of chlorophyll and its modifications, and most allow to maintain and increase the chlorophyll content in the final product were determined.
