Essay

The work devoted to improving the technology of homogenized fruit products. Was justified the value of the hydrodynamic treatment processing to ensure for industrial sterility of homogenized fruit products. Have been investigated changes in the components of the chemical composition and biological value of raw materials, which was treated on installation type TEK-SM. Technology was developed to produce fruit homogenized products using hydrodynamic processing. Was conducted social and economic evaluation of the technology. Has been developed and approved the regulatory documentation for the product.
