This dissertation research is devoted to the poultry products technology improvement using high hydrostatic pressure. Studied is the effect of pressure onto chemical, functional technological, histological and microbiological parameters of poultry. Elaborated are the recommendations as to methodology of using different modes of adiothermal processing technology applied to the poultry products.
