Dissertation is devoted to the development of elements of storage technology parsley on the basis of agrarian hydrogel and antioxidants, which allows extend shelf life of greens without significant loss of quality and biological value. It was investigated the influence of the developed method on the commercial quality during storage, natural weight loss, changes in the main components of the chemical composition, antioxidant defense system. Proved high efficiency of nutrient medium on the basis of agrarian hydrogel and antioxidants for long-term storage of parsley.
