This thesis is devoted to improvement of technology of meat products through the use of fractions electroactivated water in its pure form and as binary mixtures. Recommendations on ways of using fractions electroactivated water for technological purposes at industrial enterprises. Confirmed economic feasibility of the introduction of advanced technology and carried out industrial testing of the retrofit technology.
