Essay

The dissertation is devoted to scientific substantiation and development of the technology for prolongation of the term of cooled meat storage by means of film-forming coating based on hydrocolloids and bioprotective coating based on lactic acid microorganisms. Taking into consideration the characteristics of cooled meat storage, the screening of lactic acid microorganisms was conducted and its selection for bioprotective coating development was justified.
