Essay

The dissertation is devoted to solving a scientific and applied problem, which consists in increasing the energy efficiency of production processes of bakery production by implementing rational modes of functioning of the bakery's electrical complex with the use of energy-efficient technologies of control of technological processes. The analysis of functioning of modern baking complexes, theoretical and practical researches of the process of production of bakery products and substantiation of directions of increasing energy efficiency of the operating modes of the complex taking into account assortment constraints and quality indices of finished products are carried out. The conceptual model of the electrotechnological complex of bakery production is developed, on its basis energy flows and a complex of mathematical models of energy-production processes of the bread-baking plant are investigated. Experimental research was carried out at the production site and the interconnections between the technological and economic parameters of bakery products production were evaluated in order to assess possible ways to increase energy efficiency. The mathematical apparatus was substantiated and the complex of models of estimation of energy efficiency of processes of production of bakery products was perfected, imitative modeling was checked for adequacy and technological conformity. The use and synthesis of the control system, which takes into account the assortment task, the daily cost of energy resources and the use of cogeneration equipment in the existing architecture of the bakery's electrical complex, is taken into account when selecting the energy efficient mode of operation, and it establishes its functional quality through simulation modeling. The work of the electrical complex for the production of bakery products with an energy efficient control system in the production environment was tested and recommendations were made regarding the practical application of the established methodology for increasing the energy efficiency of the operation of the electrotechnological equipment.
