Essay

The dissertation is devoted to solving of important scientific and technical problem - increasing energy efficiency of the process of obtaining antioxidant powder from red beetroot with maximum content of betanin. The energy-efficient preparation of raw materials for drying was developed. Тhis made it possible to reduce energy consumption at this technological stage by 85 %. On the basis of conducted researches of kinetics of antioxidant raw materials drying, energy-efficient step modes of drying were developed, during which process intensification approximately is practically 2 times, with maximum conservation of betanin 96.5 %. On the basis of calorimetric researches it was established, that the heat of evaporation of water in the antioxidant composition is less than the heat of evaporation of the red beetroot. As a result of derivatographic researches it was established, that the thermal stability of composition exceeds the thermal stability of its components. Resource and energy saving thermal technology for antioxidant powders is developed.
