The Doctorial Dissertation is devoted to the complex solution of the problem: scientific rationale and technological possibilities of food products quality and biological value improvement by means of bioactive substance usage exstracted from the domestic wild plants (ash berry, choke berry, elder berry, bilberry, shadberry, mulberry, cranberry). Chemical compounds peculiarities of Ukrainian wild fruits and berries were investigatet and scientific rationale for means of raw materials processing into cannedfoods, i.e. juise, puree and guick-frozen were given.
