The thesis is devoted to the development of scientific principles of the large fruits cold storage with the use of antioxidant substances treatment. The scientific concept of the technology of the fruit products storage refrigerating based on increasing the adaptive potential of fruits to the negative effect of stress abiotic and biotic factors by exogenous treatment with antioxidant substances was developed in the result of the work.
