Object of research - process of extracting sugars from beet raw material, which is carried out in the titled diffusers of sugar factories; subject of research - mathematical models of sugar extraction from beet raw material in the titled diffuser and methods of computer simulation of this process; methods of research - methods of the correlation theory of stochastic systems, theory of sugary substances, theory of heat mass transfer, theory of a similarity and calculus, fuzzy logic, theory of optimization, theory of programming of the computer, numerical methods of problem solving; the purpose of the research - development of mathematical models and computer methods of simulation of the technological process of sugar extraction in the titled diffusers, suitable for development of the control algorithms by the technological process of sugar extraction from a beet shaving on sugar factories; theoretical and practical outcomes - new methods of computer simulation and mathematical models of the extraction process, which enable to simulate a random, distribution and indeterminacy of parameters of this process, techniques and algorithms of mathematical description of sugar extraction in the titled diffuser; the level of implementation - within the brunch of industry; sphere of introduction - food-processing industry.
