Essay

The physical-chemical studying of reactions of phenols, contained in plant extracts, with peroxyl radi-cals of ethylbenzene, sunflower oil and diphenilpycril-hydrazil was carried out. It is shown, that plant ortho-polyphenols are one of the most effective antioxidants. In first the dependencies between kinetic parameters of antiradical activity of the investigated phenols and their electron structure in form of two-parameter correlation equation, which allow predicting the antioxidant activ-ity for series of unshielded phenols, are established. The features of chemiluminescence, observed upon in-hibited by natural phenols oxidation of ethyl benzene and sunflower oil, was investigated. It is shown, that the reaction between phenoxyl and peroxyl radicals can be the source of chemiluminescence. It is shown, that the basic laws of phenols and plant extracts antioxidant activity changing, established for oxidation of modelling system (ethylbenzene), are kept for natural system (sunflower oil).
