Essay

The thesis is devoted to a scientific substantiation of technological regimens of rennet cheeses with low cook temperature manufacture with using of the specially created dairy starters for direct vat inoculation. The regimens of technological process of dairy starters "Active" and "Active-LN" production and cheeses manufacture are studied. The influence of a way of repeated thermal processing of lactic raw material on its properties and quality of cheese fixed. The changes of main indexs of new rennet cheeses are investigated during their production and storage.
