Essay

The results of studying sap loss value, content of soluble solids, sugars, titratable acids, ascorbic acid, amount of bioflavonoids, anthooyans as well as organoleptic features of sweet cherry fruits of mid-season and late varieties at freezing, storage and further processing by the method of thermal sterilization are stated. It was established that, at freezing and six-month low temperature storage of sweet cherry, late varieties were characterized by less loss of cell sap, greater content of soluble solids, sugars, bioflavonoids, higher total degustation score than mid-season varieties. Mid-season sweet cherry varieties Dilemma, Skazka, Vinka; late varieties Temporion, Talisman, Meotida are the most suitable for freezing, storage, subsequent processing. The complexes of physico-biochemical parameters allowing to forecast scientifically the greatest suitability of sweet cherry varieties of different maturation terms to freezing were discovered. The economic efficiency of the introduction of the freezing of the best new regionalized sweet cherry varieties of the Ukraine south info production was determined.
