Object – carotenogenesis and selection of strains yeast of Phaffia rhodozyma, lipid peroxidative oxidation and systems of antioxidants defense. Aim – to select strains yeast overproducers carotenoids, to elucidate optimal cultivation conditions, to study the biochemical characteristic, to reveale the effect of such additive the biomass of yeast Phaffia rhodozyma on lipid peroxidative oxidation, on antioxidant status of animal organism and on poultry productivity and eggs quality. Methods of investigation and equipment: biochemical, genetics, morphometric, statistic, Milichrom, Specol, KPK-3, ANKUM-2M. Newness: The new yeasts strains, overproducers carotenoids, were selected. These strains produced up to 1 mg carotenoids per 1 g dried biomass. It was shown that the resistance of the mutant cells to UV-radiation depended on their carotenoid content. The optimal media composition and cultivation conditions for production of a bigger biomass and carotenoids were elucidated. The chemical characteristicsof the biomass of selected strains were studied. The content of protein and lipid composition of the biomass were determined. For the first time, biomass of the mutant strain, overproducing carotenoids, as a additive to the diet of laying hens and pullets was used. The positive effect of such additive yeast of Phaffia rhodozyma on lipid peroxidative oxidation, on antioxidant status of animal organism and on poultry productivity and eggs quality was revealed.
