. Dissertation is devoted to development of parameters of termostabylyzation of new can foods from the acclimatized object – Mugil so-iuy Basilewsky. Generalizations of theoretical and experimental material allowed to set economic and power efficiency of the use of the modes of sterilization, based on principles of termostabylyzation. Technological parameters of concentrating the fermental preparation taken from interiors of fishes, and reception of food fish forcemeat and products on his basis are developed. Parameters antipressure are scienti- fically proved at sterilization of fish canned food in glass container III as corking.
