Thesis is devoted development of composite mixtures at production technology from the different corn cultures flour. Expedience and possibility of wheat flour food value increase, expansion of assortment of products which is made the millers is scientifically grounded, due to drafting of composite mixtures. Technology of composite mixtures production is offered. The project of normative document is developed on composite mixture of promoted food value. Technology approved in the productions terms.
