The dissertation is on the subject of improvement of Ukrainian technology of rice grain processing based on water and heat processing application. The technological process structure of preparatory department of rice factory with the use of water and heat technology processing. There has been developed a project of technical documentation for steam – boiled cereals. The worked out technology is accepted for introduction by Kerch factory of bakeries - AR Crimea.
