Essay

The thermal processing of sugar-beet cossets has been analyzed and the main process in operation of diffusion plants has been defined. The development of process in beet cossets under temperature treatment from 55 till 95°C has been investigated. It has been found that biochemistry's changing in the beet tissue took place only in definite time after heat. Mathematic description of this process has been elaborated. The industrial diffusion plant has been completed by many-steps irrigation pre-scalder. Under the results of industrial tests the positive influence on the technological indexes of diffusion plant has been determined. New models of plants for intensive count-current heating of beet cossets has been elaborated, defended by patents, produced and operated in industrial conditions.
