Essay

A research object is technology of the combined soul-milk product with the dried soy-bean milk. The methods of researches are the standard, well-known and original methods of research. Expedience of the use of the dried soy-bean milk is set in compounding of the combined soul-milk products, in place of the traditionally used dried fat free or dry whole cow milk. The process of acid coagulation of milk-vegetable mixtures is trained depending on the dose of the borne dried soy-bean milk. Amino acid composition is explored in ККМП; certain composition of casein factions; the state of moisture is trained in a product. Developed compounding ККМП, which provide the increase of mass particle of dry matters from 17,0 to 21,0 %, making of product without the stabilizators of structure, with addition of ferment, sugar, plodovo-yagodnykh napolnyteley
