Essay

Dissertation is devoted to the scientific grounding and development of the technology of gerodietic milk drinks with the prolonged shelf life. The technological regimes of production of the gerodietic milk drinks with the prolonged shelf life have been scientifically grounded. Composition of milk fatty basis is optimized using the second hand dairy raw material;the optimum concentration of lactulose in the gerodietic drinks has been found; antagonistic and sinergetic effects of changing the biological activity and contents of the malonic increase of probiotic and anti-oxidant properties in the milk fatty mixtures, as well as decrease of contents of the malonic dialdehyde.
