The thesis exposes results of theoretical and practical re-searches in the sphere of forming of capital management of wine-making enterprises for the optimization of its structure to provide a financial stability and effective functioning in the modern conditions of management. The author gives consid-eration to the economic essence, classification of capital and the methods of forming of capital management of the enter-prise. The certain strategy of capital management forming is developed, in which the author offers methods of ranking the capital structure according to the sources of financing the en-terprises assets. The economic and mathematical model of optimization of capital of wine-making enterprises, which gives the opportunity to set on optimum correlation of their own and borrowed capital is offered. This model helps to achieve corre-sponding financial stability and minimize capital value
