The dissertation is devoted to the decision of theoretical, methodical, organizational and practical problems of estimation and increasing the efficiency of using the labour potentials of ukrainien baking industry enterprises. In the dissertation the interrelation between labour potential, a labour, a manpower and the human capital is established, author's definition of labour potential of the enterprise is stated, advanced the organizational-economic mechanism of management and it is offered model of management to them on the baking industry enterprises of Ukraine. On the basis of analysis results of a current condition, efficiency of using and development the labour potentials of the baking industry enterprises has been developed the concept of management by efficiency of its using, which essence is reduced to reorganization of existing control systems by formation, use and development the labour potential of the enterprises by introduction of control systems by knowledge of workers, a control systemof economic efficiency of expenses for labour potential and a control system of results its using.
