The thesis is devoted to scientific grounds and development of the technology of vegetables storage in the solutions of sodium chloride with the aim of their further processing into marinades. The possibility of using of sodium chloride solution as a medium of vegetables storage, has been investigated theoretically and experimentally. The influences of sodium chloride concentrations on physical and chemical, biochemical, histological, rheological and organoleptic in dices of vegeta-bles, were been investigated.
