The thesis is devoted to the study of the problem connected with participation of membranes transport proteins and antioxidant enzymes in protection of the yeast S. cerevisiae against acetic and propionic acids stress. Pretreatment of the yeast cells by sublethal concentrations of hydrogen peroxide results in the increased resistance to followed acid-induced stress. Thus, it may be suggested that antioxidant system may be involved of the yeast protection against the stress induced by acetic acid. It was found that defect in SOD expression increases yeast sensitivity to acetic acid-induced stress. The effect of acetic acid on SOD activity is cancelled by cycloheximide or inactivation of gene, encoding Yap1. It was concluded that SOD implicates in the yeast adaptation to acetic acid stress.
