The Object - processes of peroxide oxidization of lipids (HALF) and state of the fermentative system of antioxidant protection in one and two year aged carp's fabrics and organs at different selenium and sulphur maintenance in water and by adding sodium of sulfate to the ration of carp. Aim - to define the antioxidant system of the carp organism at different selenium and sulphur maintenance in water and in the ration Methods: biochemical, chromatographic (gazozhidkostnaya, tonkosloynaya chromatography), spectrophotometry (atomno-absorbcionnaya,plamennaya spectrophotometry), radiological, statistical.. Novelty - the new results have been received according to the ions of selenite and sulfate influence in case of their level in water increase and the products HALF content and the antioxidant enzymes activity in different carp's fabrics and organs. The dependence on a straight-line basis between the level of selenium in water and his content in blood and carp skeletal muscles, and by the selenium and sulphur maintenance in water and by the activity of antioxidant enzymes (superoksiddismutaza, katalaza and glutationperoksidaza) has been set for the first time. The reverse dependence between content of products HALF (gidroperoksid lipidov, malonoviy dialdehyde) in fabrics and organs of carp and by maintenance of connections of selenium and sulphur in water has been found out. The influence of selenite ions in case of increase of their level in water on content of row makro- and oligoelements in blood, fabrics and organs of carp is found out. The synthesis activating of albumens and katabolism oppressing 2-14 of cistina, 2-14 of lizina, 3-fenil- 1-14 of alanina and the use of their carbon skeleton in power processes in the carp skeletal muscles by adding sodium of sulfate to his ration firstly has been established.
