Dissertation is dedicated to the scientific substantiation and development of the technology of short products on the basis of emulsion, processed in electro-magnetic field of apparatus BA-100 with using of refined corn oil and althea root powder as emulsion stabilizer. The results of theoretical and practical researches proved the expediency of using of refined corn oil and althea root powder as emulsion stabilizer in the short products recipes.
