Essay

Technological processes of bread making which are implemented on modern technical equipment are the objects for research. The purpose of the conducted research is an improvement of technical and economical aspects for bread making by using automated system of multipurpose control based on scenario approach and intellectual mechanisms. Research methods are based on theory of automatic control theory, system analysis, category-functor analysis, quality measurement, control object identification, multipurpose optimization, conflict theory, methods of simulation. A methodology for building scenarios in undefined circumstances, changing targets priorities and conflict situations which might be for complex technological processes controlling in food industry was created. A functional structure of intellectual system for multipurpose control over bread making and software interface for automated operator work place were created. For the first time the methods of factor-target, category-functor and situational analysis were used for selecting situational meaningful areas of bread making. Trends and special characteristics of situation progress in technological complex for bread-making plant were defined. For the first time the task of multipurpose optimization for different production circumstances was defined and resolved. The algorithms for scenario based control were developed. The offered solutions passed experimental verification in the consumer society "Yagotinskii bread" and passed for subsequent introduction. The methods of design for intellectual subsystems of automatic control system are used in educational process of department of automation and computer integrated technologies of the National university of food technologies. Results might be used for designing and modernization of automatic control systems of technological processes in bread making.
