In this paper the results of theoretical, methodical and practical researches of forming and effective managing of turnover capital of bread-baking enterprises are shown with the goal to provide their stable productive activity and financial resistance in the modern economic conditions of economy-holding. The principals and methodic approaches to the analysis of capital are investigated, and also the peculiarities of the choice of policy of management of turnover assets of bread-baking enterprises are explored. The basic technical-economic rates of bread-baking enterprises' activity in Mykolayvskiy and Khersonskiy regions are analyzed, the evaluation of structure and sources of forming of turnover assets of these enterprises is made, and the algorithm of estimating of quality of forming and using of turnover capital is proposed with the goal to find out the reserves of its effectiveness' increasing. The system of forming and managing of turnover capital is proved, as a part of general financial strategy of the enterprise; on the base of economic-mathematical modeling the rational volume of turnover assets is estimated and the structure of turnover capital for the open-stock enterprises (bread-baking plants) is optimized, and also the propositions for re-engineering of business processes in rate-setting and forecasting of turnover tools are developed.
