Essay

Thesis is direction to scientific proving of stabilization structure system, which are freezing, by the instrumentality selection of components. The systems are able to keep all structural components on the phase of changing assumption. That validates the experimental results of starches' dispersions properties and shows the stability of deserts' consistence on the phase of changing assumption for the purpose of keeping water by the hydrocolloids later on unfreezing is possible after scientific solvent proving or after the improving of complex system, which consist of mixed starches.
