Essay

Experimental and theoretical researches of electrophysical properties of plant juices were carried out in the work. The researches done on electrical conductivity of plant juices proved that according to their effect on specific conductivity, soluble substances are to be classified into three groups: electrically neutral substances, strong electrolytes and weak electrolytes. On the basis of measurement data of the correlation between specific conductivity and the concentration of dry soluble substances in grape juice, the concentrations of organic acids and mineral substances were identified. The efficient method of quality control of transparent juices was worked out; it relied on the phenomenon of light diffraction on a space diffraction grating, created by an ultra-sound wave in the liquid. The relative change of the width off diffractional pattern was used as a measuring criterion. The method guarantees precision of the definition of concentration of dry soluble substances which is necessary for production. The electroaccoustic measuring complex for express-control of juice quality was made; it was tested in a production cycle and proved to be economically effective
