The Object: the process of formation and development of safe food as necessary component of the economic development of the State. Purpose: develop a methodological principles of strategy formation and functioning of the market for safe food and practical recommendations for its implementation on the market of Ukraine. Methods:general economic, mathematical-statistical and economic-mathematical methods, strategic and combined methods.Proposed: a conceptual approach to the formation and functioning of the market safe food through sustainable development, part of which is a modified management using environmental economic instruments.
