Dissertation thesis presents the investigation of biologically active substances (BAS) from Prunus cerasifera subsp. macrocarpa [Erem. et Garcov]. It is established that high concentrations of BAS are typical for the fruits at the physiological maturation stage and for leaf - before falling. In fruits of varieties Krasnomyasaya and Olenka fruits 15 compounds of phenol nature (phenol acids, flavonols, anthocyanins and catechins) have been identified, but in variety Krasnomyasaya anthocyans predominate and in Olenka - leucoanthocyans. The high antioxidantive activity of the cherry-plum fruits and leaves with maximum meaning in variety Krasnomyasaya (with higher content of phenolic substances) has been determined. The close correlation link between the antioxidantive activity and phenols and vitamins in the fruits has been established. It is shown that for the juice and the concentrated products it is necessary to enrich them by biologically active compounds extracted from raw material of cherry-plum leaves. For this process the procedures of obtaining the extract form leaves and the using doses for products have been optimized.
