Dissertation work is devoted a scientific ground and development of technology of receipt of the frozen ready-to-cook foods from the frozen sectional meat without his unfreezing. The necessity of provedennya of this work is conditioned the increase of amount of raw material which acts on enterprises in the frozen kind, while on traditional technology it is possible to use only frappe meat.
