In thesis the theoretical bases of formation both functioning of the market of milk and dairy products, feature of its development at a regional level are investigated, are developed and the directions of improvement of activity of the subjects of the market in region, formation and development of the market of milk and dairy products on prospect are proved. In work the complex estimation of a modern condition of manufacture and processing of milk and milk products in Ukraine and Mykolayiv region is carried out.
