Guzenko V. Improvement of the Process of Manufacturing Pectic Concentrate and its Instrumentation

The dissertation is devoted to the improvement of the processes of extracting pectic substances, concentration and purification of pectic extractions for the production of pectic concentrates and equipment for their realization. Mathematical model of the process of pectic substances with mixing in the form of criterion dependence, which allows us calculate mass transfer coefficient in the system "solid-liquid." Rational parameters of the process of extracting pectic substances from fresh and dry beet pulp with the use of the suggested combined mixing element are determined. The processes of ultrafiltration (UF) concentration and diafiltration (DF) purification of pectic extracts with the use of PAN membranes in a blind mode and vibration mixing mode are investigated. Rational parameters of technological processes of UF-concentration and DF-purification of pectic extracts in a mode of vibration mixing of original stock are determined. Physical-chemical quality indexes of a final product - pectic concentrate - under different parameters of the processes of its reception are determined. Equipment constructions for pectic substances extraction in laboratory and industrial conditions are designed. A set of measures on implementing the results of the research into practice is provided. Social and economic effects of the received results are determined.
